Ingredients:
3 oz chicken breast (cubed)
2 oz chorizo (sliced or cubed)
2 oz mixed/diced vegetables - peppers, onions, tomatoes
2 oz steamed white rice
Directions:
1. Preheat oven to 350.
2. Place meat and vegetables in roasting pan with 3/4 cup water and sprinkle lightly with thyme, paprika, and cayenne pepper for seasoning.
3. Cover with lid and bake at 350 degrees for 30- 40 minutes.
4. Serve on bed of steamed rice.
